Yes, you heard that right! Cashew pudding! I've heard of, and tried, cashew cheese and cashew cream, but making cashew pudding never crossed my mind! But I am so glad because it was absolutely delicious! And the best part is, it was made with our cashews!

Susan found this recipe from Detoxinista. She brought it into work for all of us to try it, and we all loved it! It was delicious! A great healthy alternative dessert. It is also dairy-free, for those of you who stay away from dairy. Cashews have high levels of iron, magnesium, zinc, copper, phosphorus, and manganese, and so many other health benefits! Keep reading for the recipe!

Our recipe notes:

-Be patient. Taste as you go. Maybe you need to add more liquid (almond/cashew milk, or water), maybe more vanilla, maybe more sweetener (maple syrup, honey) and continue to blend until completely smooth.

-Top with whip cream, or Almond Milk Whipped Cream

-Garnish with Dried Raspberries to add color and a little more deliciousness. It really compliments the pudding!
