Tropical Ginger Chew Cookies

Makes: 40 cookies

Ingredients:

3/4 cup butter substitute or softened butter (Earth Balance recommended)

1/2 cup sugar

1/2 cup brown sugar

1 egg

3 tablespoons molasses

1 1/2 cup all-purpose flour

1/2 whole wheat pastry flour

2 teaspoons baking soda

1 teaspoon cinnamon

1 teaspoon ground ginger

1/2 teaspoon pumpkin pie spice

1/4 teaspoon Himalayan pink salt

3 tablespoons crystallized ginger, finely chopped

3/4 cup Tropical Trio (dried mango, papaya, pineapple) finely chopped

Nonstick spray

Directions:

1. Preheat oven to 375 degrees

2. Cream butter substitute and sugars together, beat in egg and molasses

3. Whisk other dry ingredients together and stir into wet ingredients

4. Stir in the fruit and place 1 heaping teaspoon dollop on a lightly nonstick sprayed cookie sheet, 1 inch apart.

5. Bake 7 to 8 minutes. Don't over bake.

6. Let the cookies cool on a cooling rack

7. For added tastiness, drizzle some dark chocolate over the top of the cookies. They are delicious with our without the chocolate drizzle.
